About the Chef

As a bakery chef with over 50 years of professional experience, I wanted to offer something different to my customers – cookies that not only help people lose some extra weight, but are also healthy and safe to eat. I looked for the best ingredients I could find in Japan.

I use non-gmo soybeans grown in Hokkaido, the northernmost island of Japan where the climate is suitable for growing high quality beans. I purchased a special equipment to make my own soymilk using the purest groundwater specially delivered to my bakery. The key ingredient to my cookies is ‘okara” the healthy soy fiber that absorbs liquids and expands in the stomach to control the appetite.

It took many trials and errors to devise my own method for making these cookies, but I am very pleased with the result – a low calorie, high fiber cookie with no preservatives or additives, and with nutritional ingredients that help control hunger. These cookies are now a very popular diet product in Japan with a high success rate. I hope that my cookies will help everyone, in the United States or in Japan, looking for a simple and straightforward way to lose weight – the soy way.”
