The Japanese name is “okara” (oh-ka-ra) – the literal translation being “Honorable Pulp” (!!). Although “okara” is a byproduct left over from soybeans once they’re made into tofu or soy milk, it is actually well-known for its nutritional value. Additionally, “okara” is high in fiber* and when consumed with liquids, its volume increases twofold while its weight increases threefold.
